We love our pastas but they don’t always love us! Brown rice pasta is a good healthy alternative to white/wheat pasta. It’s gluten-free so good choice for people w/wheat allergies or celiac disease. Check out this simple summer recipe.
Brown Rice Pasta with Beans and Greens
2 ½ cups greens beans-cut up
8-12 oz brown rice pasta
¼ cup balsamic vinegar
1 tsp garlic-minced
Sea salt and black pepper
1/3 cup extra-virgin olive oil
1-2 cups cooked kidney, black or aduki beans
½ cup basil shredded
Bring water to boil in large pot. Cook green beans til tender-about 3 minutes. Remove w/slotted spoon. Run under cold water to stop the cooking process. Set aside.
Add brown rice pasta to same water and cook til done. Drain and rinse under cold water.
Whisk together in a bowl, vinegar, garlic, salt and add oil in w/black pepper. Add beans and green beans to the dressing mixture. Toss in pasta and combine. Stir in shredding basil and add few leaves for garnish. Can be served hot or cold.
