1/2 cup chopped fresh parsley
1 bunch scallions, sliced thin

1/2 cup chopped fresh mint (or 1/4 cup dried mint)Dressing:
3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
3-4 cloves garlic, mashed
Salt to taste
